Cupcakes 3/4 cup unsalted butter, at room temperature 1 1/2 cups powdered sugar 3 teaspoons grated lemon zest 2 large eggs 1 1/4 cups self-rising flour 1/4 cup buttermilk 2 tablespoons freshly squeezed lemon juice 12 teaspoons seedless raspberry jam (Confession: I didn’t use seedless)
